How to Brew
Heat water to 200–205°F — just off a full boil
Add two heaping teaspoons (3.5g) to your tea infuser or single use bag
Pour 8oz of hot water over your herbs
Cover your cup and steep for 8 minutes — this is important; the volatile oils in peppermint, spearmint, and lemon balm are heat-sensitive and will escape into the air if left uncovered
Remove infuser, sweeten lightly with raw honey if desired, and sip warm
